From the early 1970s onwards, Jacques Nebot travelled to the most beautiful fishing grounds as part of his seafood business. It was on a trip to the shores of the Caspian Sea that he began to take an interest in these little black pearls, which became his passion and his profession. Through his travels and encounters, he tamed the world of sturgeons, expanding his knowledge and rubbing shoulders with fishermen and retailers. From 1975 to 1980, as head of Caviar Volga, at the time the largest importer of Iranian caviar in France, he learned the secrets of caviar production and trade. In 1981, he went independent and set up Astara. Four years later, he opened his own restaurant, Le Coin du Caviar, near the Bastille. His qualities leave no one indifferent. In particular, the Monegasque Michel Pastor asked him to become Chairman of Hédiard. In 1995, Jacques Nebot set to work. He had to restore the lustre of this prestigious name, known the world over, and put the accounts in order. And he succeeded. At the same time, he bought Astara in 1997 from Européenne de Gastronomie, which had acquired it 9 years earlier. The Hédiard adventure came to an end with its sale in 2007. But since 2001 another challenge had already been taken up. The Kaviari company was born, headed by Raphaël Bouchez. Once again, Jacques Nebot's experience, know-how and advice are supporting the development of this young company...
